How to Choose the Right Coffee Beans

Hillbilly Coffee Roasters

Choosing the right coffee beans can feel daunting when you're standing in front of a wall of options. Roast level, origin, grind type, weight — there's a lot to consider. This guide breaks down what actually matters so you can find your perfect cup.

Roast Level

Roast level is the single biggest factor in how your coffee tastes.

  • Light roast preserves more of the bean's original character — fruity, floral, bright acidity. Great for filter and pour-over brewing.
  • Medium roast balances origin flavours with roast notes — caramel, nutty, smooth. Versatile across brewing methods.
  • Dark roast develops richer, heavier body with chocolate, molasses and lower acidity. The go-to for espresso and milk-based drinks.

Most cafe-style drinkers — those who enjoy flat whites, lattes and cappuccinos — will prefer a medium or dark espresso blend.

Blend vs Single Origin

Coffee blends combine beans from two or more origins to achieve a consistent, balanced flavour profile. They're designed to perform reliably across shots and milk ratios — predictable and forgiving. Single origin coffees come from one farm or region and showcase that location's unique character: terroir, variety, processing method. They're more expressive and better suited to filter brewing or for drinkers who enjoy exploring flavour.

Hillbilly Coffee Roasters offers both. Our full coffee range includes classic espresso blends for everyday drinking and specialty single origins for those who want something more distinctive.

Grind Type

The grind you choose should match your brewing equipment:

  • Whole Bean — best for freshness; requires a burr grinder at home
  • Espresso Grind — fine, for espresso machines and Moka pots
  • Plunger Grind — coarse, for French press
  • Filter Grind — medium-fine, for drip machines and pour-over
  • Stove Top Grind — medium, for stovetop espresso makers

All Hillbilly Coffee products are available pre-ground to your preferred method, or as whole beans if you grind at home.

Freshness Matters Most

The freshest beans always taste better than stale premium beans. Look for roasters who roast to order rather than holding stock on shelves. At Hillbilly Coffee Roasters, every order is roasted fresh after you place it and dispatched within 2–3 business days.

If you drink coffee daily, a Subscribe and Save plan means you'll never run out — and you'll save between 15 and 40 per cent on every order depending on your delivery frequency. Browse our full range of coffee beans to get started.
