How to Store Coffee Beans to Keep Them Fresh

The Enemies of Fresh Coffee
Coffee goes stale through exposure to four things: oxygen, moisture, light and heat. Each one degrades the volatile compounds that give coffee its aroma and flavour. Your storage method should protect against all four.
The Best Container for Coffee Beans
An airtight container is essential. The best option is an opaque container with a one-way valve — the valve lets CO2 (released by fresh coffee after roasting) escape without letting oxygen in. These are widely available at kitchen stores and online.
Avoid glass containers left in sunlight, or any container that doesn't seal properly. The resealable bags that specialty roasters use are actually good storage vessels — roll the top down, press out the air and clip or seal it closed.
Where to Keep Your Coffee
Store your coffee in a cool, dark, dry place — a pantry or kitchen cupboard away from the stove or oven. Room temperature is fine. Avoid the top of the fridge (warm and humid) or next to appliances that generate heat.
Should You Refrigerate or Freeze Coffee Beans?
The refrigerator is generally not recommended for coffee. It's humid and can cause condensation on the beans each time you open the container. If you must store coffee long-term, the freezer is a better option — seal the beans in an airtight, moisture-proof bag and freeze in one-week portions so you only thaw what you need. Never refreeze.
The simplest rule: if you'll drink the coffee within two to three weeks, store it in an airtight container at room temperature.
How Long Do Coffee Beans Stay Fresh?
- First 2–4 weeks after roasting: peak flavour window
- 4–8 weeks: still very drinkable, flavour beginning to fade
- Beyond 8 weeks: noticeably stale if stored at room temperature
